Chicken McFly i.e. Caesar Burger

Here comes another scrumptious burger! Since I can’t get enough of these buns filled with, beef, portabello, cheese, veggies and what not – I started the Burger of the Month series a while back. To see the previous burgers click on the recipe you wish to read down below and for today’s recipe just continue reading this post.

Teriyaki Burger

Mushroom, Pine Nut and Chèvre Burger with Pesto Mayo

This burger came to me when I couldn’t decide what to have for dinner – Caesar Salad or Burger? Hard to decide between two such good things! Or maybe it’s one of those first world problems. However I decided to combine the two. Brilliant idea, right? It’s like combining the best of two worlds. And a perfect way for me to escape my decisions anxiety.

As you probably have understood this burger consists of everything that’s burgery combined  with all the attributes of a Caesar Salad. A chicken patty, toasted Ciabatta, Roman lettuce, bacon, tomatoes, shredded red onion, Parmesan and last but absolutely not least lots and lots of Caesar dressing. Yum!!!

The name Chicken McFly came to me an evening when we were watching Back to the Future while munching on these burgers. I find it quit amusing since it also happen to mock McDonald’s ☺ And making fun of McDonald’s is always entertaining.

Chicken McFly – Caesar Burger – 8 Burgers

This burger combines two of the best foods – burger and Caesar salad. So yummy!!!

500 g minced chicken
1 egg
100 g cream
50 g breadcrumbs
125 g yellow onion (1 small)
1 garlic clove
4 anchovies, the ones salted and preserved in oil (Swedish: sardeller)
Black pepper
Cayenne pepper
Olive oil

Caesar dressing
1 egg yolk
1 tsp Dijon mustard
1 tsp red wine vinegar
225 g neutral oil
25 g extra virgine olive oil
4 anchovies, see above
1 garlic clove
50 g Parmesan
5 g lemon juice
50 g creme fraiche
White pepper
Black pepper

To serve
8 Ciabatta buns (or whatever kind of buns you’re into)
Roman lettuce
Red onion

Burger. Peel and finely chop the onion. Fry on quite low heat in some olive oil until soft and translucent. Add finely chopped anchovies, garlic, black pepper and just a tiny pinch of cayenne and fry for two more minutes before setting it aside. Combine egg, cream and breadcrumbs in a bowl and let soak for about 10 minutes. Combine the breadcrumb mixture with the fried onion and the minced meat. Fry a small piece of the minced meat mixture and have a taste to make sure there is enough seasoning. Form into 8 patties and fry om medium high heat until nicely golden.

Caesar dressing. Start making the mayo by combining egg yolk, Dijon, vinegar, salt, black and white pepper in a bowl. Finely chop garlic and anchovy and add that to the mixture. Slowly add the oil under constant whisking until both the neutral and olive oil are incorporated (for a more detailed description of how to make a mayonnaise click the link D.I.Y. Mayonnaise). Finely grate the Parmesan and combine with the mayonnaise. Add lemon juice, creme fraiche and maybe some extra salt and pepper.

To serve. Fry the bacon in a dry pan until golden. Shave some Parmesan over the chicken patties and put them in the oven to melt the cheese. Rinse and shred the salad and slice red onion and tomatoes thinly. Toast the bread in a dry pan until nicely roasted and crisp. Assemble the burger by smearing some dressing on the bottom bun. Place some salad, a few slices of tomato and red onion on top of the dressed bun. Lay a patty and two strips of bacon over and finish everything off with the upper bun smeared with another dollop of dressing. Tuck in and enjoy!
